Herby cheese tartlets with fruity lamb's lettuce

Surprise your guests with these tartlets made using lots of fresh herbs and your favorite KALTBACH cheese, served as a starter, side dish oder snack. An aromatic cheese tart with herbs that can be adapted to suit your own individual cheese preferences.

  • 3 eggs
  • 100g flour
  • 50g butter
  • sea salt, coloured pepper
  • 1 cup sour cream (= 150 g)
  • 1 tbsp each of chopped chive, dill, tarragon and parsley
  • 200g KALTBACH cheese (your favourite cheese)
  • 4 apricots (fresh or tinned)
  • 200g lamb's lettuce
  • 4 tbsp vegetable oil
  • 4-5 tbsp raspberry vinegar
  • 1 pinch sugar
  • Grease for the moulds
  • dried peas for blind baking
  • Separate 1 egg. Knead together the flour, butter, 1 egg yolk and 1/4 tsp salt to form a smooth dough and chill for around 30 minutes.
  • Stir the egg white with the sour cream and herbs. Grate the cheese, fold half into the cream and herbs and season with salt and pepper.
  • Divide the dough into 4 portions, roll into rounds between foil and use to line 4 greased tartlet moulds (Ø approx. 12 cm). Cover the dough with baking paper, weigh down with dried peas and bake blind for around 20 minutes in a pre-heated oven at 180°C (gas mark 3, fan-assisted 160°C). Remove the peas and the baking paper, spoon the mixture onto the dough, sprinkle with the remaining cheese and bake for a further 20–25 minutes.
  • Wash the salad. Wash the apricots, cut into halves, remove the stones and cut the apricots into slices. Mix together the vinegar and oil, season with salt, pepper and sugar and mix together with the salad ingredients. Serve the herby cheese tartlets with the salad.
