In KALTBACH's sandstone cave the conditions for the cheese to ripen are ideal, so that after several months the cheeses reach the perfect maturation point and develop their full character and dark-brown rind. This process is called cave refinement.
Only the very best cheese wheels from selected dairies are chosen for cave aging, where they are then carefully refined by our cave masters – until each cheese becomes a genuine culinary masterpiece.
